Spinach Dill Salad
Serves 6
Ingredients
Dressing:
- ½ C extra virgin olive oil
- ¼ C red wine vinegar
- ¼ C sugar
- 2 cloves garlic, minced
- ¼ tsp salt
- ¼ tsp freshly ground pepper
- ¼ tsp dry mustard
- ¼ tsp onion powder
Salad:
- 2 lbs fresh spinach, torn and coarse stems discarded
- 1 bunch green onions, chopped
- ½ C toasted slivered almonds
- 1 pint strawberries, hulled and sliced
- ¼ C chopped fresh dill
Directions
Whisk all dressing ingredients together, cover and chill.
Toss salad ingredients together and add dressing just before serving.
Serve with salmon topped with salt and pepper, olive oil, and roughly chopped dill.
